(Among other things), evolution requires traits to be inherited across generations of replication. Very few things are capable of replication. A smaller subset of things capable of replication are capable of inheriting traits of their ancestors.
Consider a piece of paper with many numbers written on it. There is no known mechanism for that piece of paper to replicate itself. You could tear it in half, but no information would have replicated. One half would have half the information, the other half would have the other half.
This piece of paper does not fit the definition of having undergone evolution. Therefore the statement: "everything has undergone evolution" is false. QED, your premise is false.
All apples are fruit but not all fruit are apples. Just because something is unique does not mean it had to exist "before information" whatever that means.
